        Similar in appearance to cumin seeds, fennel seeds are the dried seeds of the fennel herb. They smell warm and sweet with a hint of anise. They can be added to spice mixtures like Indian panch phoran and Chinese five-spice powder, or they can be used alone.

        Toasting or crushing fennel seeds will enhance their flavor. To grind, use a pestle and mortar, place in a sealed food bag, pound with a rolling pin, or pulse in a clean coffee grinder to a fine powder. Toasted seeds should be heated in a dry frying pan over medium heat for a few minutes, stirring the pan often to prevent the seeds from burning.
